Silver Thyme

Thyme is a perennial that loves warm, sunny fields, and is 
found throughout North America. 
It grows to 15 inches tall, and makes an excellent ground cover 
on dry slopes. Trim it back after flowering to prevent it from becoming woody.

This aromatic bee attracting plant is an indispensable kitchen herb. Ornamental for the rock garden and a good ground cover. Lilac flowers and green-gold leaves. With a vigorous dense creeping growth habit, this makes an excellent plant to use between 
pavers or trailing over a container. 
Uses: Culinary & Medicinal herb.
Lemon Thyme


Perennial 
A fantastic cultivar of thyme with a delightful lemon scent and flavor! Lemon thyme is particularly good for fish and chicken. An upright, bushy growing habit with bright 
green leaves. 
 
 

Thyme Oils and Vinegar's



Herb flavored oils and vinegar's 
are a wonderful addition to any 
pantry. For a thyme flavored oil, 
add a sprig or two of fresh thyme 
to a good quality olive oil and leave  for several months before using. 
For a vinegar, use good white 
vinegar and heat a small amount to the boiling point. Pour hot vinegar 
over fresh chopped thyme leaves. 
Leave to cool then strain and 
add to the remaining vinegar. 
Place a fresh sprig of thyme in 
a nice bottle and then cork or 
seal the bottles tightly.
French Thyme


Thyme is often used in bouquet garni, which is small sprigs of fresh herbs tied together and simmered in various dishes. Since it is an herb that helps the body to digest fatty foods, it is often used as an ingredient in those kinds of dishes. It is especially tasty with meat, poultry, and game. It has a strong taste, so you may want to use it sparingly in most dishes. 

Doone Valley



Heavily scented of lemon, Doone Valley Thyme makes a nice little 
mat or mound for filling in and around taller plants. Each plant spreads to about 18 inches and produces 3 or 4 inch long flower heads full of pink flowers. The Lemon scent does not hold up in cooking as regular Lemon Thyme  does. However, both the leaves 
and the blossoms can be used 
as brilliantly colored, fragrant garnish.
